Ingredients
  

For the Chicken:

  • 4 6–8 oz each boneless, skinless chicken breasts
  • 8 slices thick-cut bacon
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste

For the Honey Mustard Sauce:

  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions
 

Prepare the Chicken:

  • Preheat your oven to 375°F (190°C).
  • Pound chicken breasts to an even 1/2-inch thickness. Season both sides with salt and black pepper.
  • Sear the chicken in a large skillet over medium-high heat for 2–3 minutes on each side until browned. Transfer to a baking dish.

Cook the Bacon:

  • In the same skillet, cook bacon until crispy. Drain on paper towels and set aside.

Make the Honey Mustard Sauce:

  • In a small bowl, mix honey, Dijon mustard, mayonnaise, apple cider vinegar, minced garlic, salt, and black pepper.

Assemble the Dish:

  • Spread the honey mustard sauce evenly over the seared chicken breasts.
  • Place two slices of cooked bacon on each chicken breast.
  • Sprinkle shredded Monterey Jack and cheddar cheese generously on top.

Bake the Chicken:

  • Bake in the preheated oven for 25–30 minutes, or until the chicken is cooked through (165°F internal temperature) and the cheese is melted and bubbly.

Serve:

  • Let the chicken rest for 5 minutes before serving. Pair with mashed potatoes, seasoned fries, or a fresh garden salad.

Notes

  • Ensure chicken breasts are of even thickness to cook uniformly.
  • Feel free to add sautéed mushrooms, diced tomatoes, or green onions as additional toppings.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
