Ingredients
  

  • 4 cups water plus more as needed
  • ¼ cup kosher salt or 3 tbsp table salt
  • 2 tbsp sugar brown sugar or white sugar
  • 2 cloves garlic minced
  • 1 tsp black peppercorns
  • 1 bay leaf optional
  • Fresh herbs thyme, rosemary, or parsley, optional
  • 1 lemon sliced (optional)
  • 4-6 pieces of chicken breasts, thighs, or whole chicken

Instructions
 

  • Add Flavorings: Mix in garlic, peppercorns, bay leaf, fresh herbs, and lemon slices if using.
  • Cool the Brine: Let the mixture cool completely before adding the chicken. You can add ice cubes or chill it in the refrigerator.
  • Brine the Chicken: Submerge the chicken fully in the brine. Cover and refrigerate for at least 4 hours (up to 24 hours for deeper flavor).
  • Remove and Rinse: Take the chicken out of the brine, rinse under cold water, and pat dry with paper towels.
  • Cook as Desired: Roast, grill, or sauté the chicken to your preference. Ensure an internal temperature of 165°F (75°C) for safe consumption.

Notes

  • Don’t Over-Brine: Leaving chicken in the brine too long can make it too salty and affect texture.
  • Use Cold Brine: Always refrigerate while brining to prevent bacterial growth.
  • Customize the Flavor: Add spices, citrus, or honey for different flavor profiles.
  • For Whole Chicken: Increase brining time to at least 12 hours.
